Random boosts

Today at Ross in the shoe section this woman told me she loved my peekaboo highlights. She asked me where i get them done. She said she has never seen any she liked but she loved mine.

At the store today a man stopped me, put his hand over his heart and told me that i was "so very beautiful".

These things make me smile... i need to smile more...

Black Forest Cherry cake!! Made with Splenda!

Today i made the above! I got the recipe from Cooking Light Magazine. Click here for recipe!

But i made some changes-- i used Splenda to replace the sugar, used diet cranberry juice, used dark chocolate cocoa, egg beaters to replace the eggs and Canola oil with Omega-3. For those of you who don't know what an Omega 3 is (and i sure didn't until now-- but i knew it was good for you) I will tell you.

Omega-3 fatty acids are considered essential fatty acids: They are necessary for human health but the body can' t make them -- you have to get them through food. Omega-3 fatty acids can be found in fish, such as salmon, tuna, and halibut, other seafood including algae and krill, some plants, and nut oils. Also known as polyunsaturated fatty acids (PUFAs), omega-3 fatty acids play a crucial role in brain function as well as normal growth and development. They have also become popular because they may reduce the risk of heart disease.

Ok back to the cake.. OMG it was great but i do have to say next time i cook this i will cook it for 30 mins and check on it. The recipe calls for 40 and that was too long-- this was because i used splenda. When using Splenda reduce the backing time by 7 to 10 mins for cakes and 3 to 5 for cookies. This cake was a bit dry but still super good!! Also next time i am going to add 1/2 cup
non fat powdered milk. The Splenda website suggests this among other things. Click here for Splenda baking tips.

the haps!

what is up with my obsession with graffiti boys???

Maybe it is the moody, artist appeal? Maybe it is the appeal of having your name on the wall for everyone to see. Maybe its their urban style- skinny jeans, funky hair, tats and old skool Nike's in all different colors. Maybe its the bad boy/ artist appeal all rolled into one. I really don't know what it is but i am hooked... I guess one turbulent relationship is not enough.. Masochistic?? The definition of masochism is the condition in which sexual gratification depends on suffering, physical pain, and humiliation.. EKKKKK! I hope not-- not really into being humiliated or suffering... Although, in my short relationship with C-- all those feelings surfaced, yet there was an intense sexual draw... But yes-- graffiti boys are my new fav... Is there a sweet, loving, educated graffiti boy out there for me? Stay tuned for more news....

Good BYE fat, HELLO skinny!

Monday marked a new another new leaf!! Val, Nikki, my Mom and I all decided to get back on Weight Watchers and get skinny! I have been doing my regular pre diet diet-- this consists of only fruits and veggies for 3 days. I picked 3 days because that is how long i can actually stand ONLY fruits and veggies. I cheated a little bit today-- popped some popcorn on the stove... BUT used a tiny amount of olive oil-- it was like 20 calories per cup.

One of my all time favorite diet foods is baked cauliflower. In fact, I crave it. Here is the recipe:

Baked Cauliflower

  • Pre Heat the oven to 400 degrees.

  • Cut up a head of cauliflower in to little pieces.

  • Spray the cookie sheet with Pam and spray a little on the cauliflower.

  • Sprinkle the cauliflower with seasoning (i use lots of Cayenne pepper and seasoning salt)

  • Bake for 15 minutes, then flip, bake for 15 more minutes and if needed, 15 more minutes.

SOOO yummy!!! I like to eat it with chopsticks just because it is fun. :)
